CAVA is one of the finest-run young restaurant companies we have examined in years: a founder-led operator with a debt-free balance sheet, unit economics that rival the best the industry has ever produced, and a management team that tells the truth when business softens. We mean every word of that praise. And yet we arrive at two stars. The reason is the discipline at the heart of how we invest: we pay up only for proven durability, and a fifteen-year-old fast-casual concept with 459 restaurants — however admirably executed — does not yet possess a moat we would bet the next twenty years on. Restaurants are the most Darwinian industry in American commerce. Every element of CAVA's success is observable, imitable, and un-patented.
